My story starts in the highest mountains of Europe.  I was suppose to be born a man.   And on my birth there was a thunder storm.  

Utilizing every part,  everything at every point in its life has a purpose.  Its the chefs purpose to find its purpose.   Nose to tail and Leave to Root.  Curing, Fermenting and all preservation techniques.
